In the Haraz mountains of Yemen, coffee is grown at roughly 1,700-2,600 m on hand-rebuilt stone terraces that hold soil and capture rain. Work is largely manual, trees are spaced about 2 m apart, harvest starts in October and only fully ripe red cherries are picked. Cool temperatures and large day-night swings slow cherry development and increase bean density.
